The other side of the calendar.

There is a practical advantage to Rio Largo that is easy to overlook. In the northern hemisphere, the olive harvest runs from September through January. By the following spring, most of the world's finest oils are already three or four months old — still excellent, but easing out of their peak.

Rio Largo harvests between April and July. The southern hemisphere's autumn and early winter arrive precisely when northern stocks begin to age. What reaches your kitchen from the Scherpenheuwel Valley is new-season oil during months when new-season oil is otherwise impossible to find.
